Taza 80% Cocoa Bar: Intense Stone-Ground Chocolate

Having tried the Taza 60% cocoa and 70% cocoa bars, I was left with one plain chocolate bar to sample: the Taza 80% cocoa bar.

The bar has strong fruity notes in the aroma, much like the 60% bar, and it seems that all the Taza bars excel in offering up intense aromas.

The bar is a bit dry, which makes it a little difficult to carry the gritty character of stone-ground chocolate without distracting from the flavor. The most apparent flavor at the beginning is a strong coffee flavor, with a subtle fruity undertone, and the overall flavor is quite bitter. Overall, the bitterness and dry texture are reminiscent of eating straight cacao nibs, which is appealing to some, but not to me personally. If you are an espresso or cacao nib lover, this is your bar. I, on the other hand, think I favor the 70% bar and hereby declare it my favorite of the Taza bars.

  3. Never had Taza bars, but these sounds pretty cool. "Stone ground" definitely sounds like something I'd like to try sometime.

  6. I prefer the smoother chocolates over Mexican chocolate but I do like the 60%. Did you know they are coming out with an orange flavor soon?? Can't wait for that :)
